Ingredients

Marodi Alfabeto: 100 g

Chicken liver: 160 g

Eggs: 2 pcs

Semolina: 200 g  + additional as needed

Breadcrumbs: 70 g

Onions: 2 heads (150 g per head)

Garlic: 1 clove

Parsley leaf: 20 g

Carrot: 300 g

Parsley root: 150 g

Chicken broth: 1500 ml

Olive oil: as needed

Salt: to taste

Pepper: to taste

Preparation instructions:

  • Chop the chicken liver and parsley in a blender into a liquid mixture.
  • In a deep bowl, mix the chopped chicken liver, 2 whole eggs, finely chopped and sautéed onion in olive oil, semolina, breadcrumbs, minced garlic, salt, and pepper.
  • Depending on the size of the eggs, add more semolina as needed until you get a mixture that you can shape into balls with your hands.
  • Scoop the mixture for liver dumplings with a teaspoon and shape them with your hands.
  • Roll each dumpling in semolina and set aside. You can keep the liver dumplings in the fridge until the soup is ready to be prepared, or store them in the freezer.
  • Chop the onion, carrot, and parsley root into cubes.
  • In a deep pot, heat a little olive oil and sauté the chopped vegetables for 4-5 minutes.
  • Pour in the broth, season to taste, and cook the soup for at least 20 minutes.
  • Add the meatballs and cook them for at least 15 minutes. Add the alphabet pasta in the last 10 minutes of cooking the soup.
  • Serve the soup with the pasta and semolina liver dumplings hot, garnished with freshly chopped parsley leaves.
