Quadretti with braised cabbage is a traditional Croatian dish, especially popular in the northern regions of Croatia. It is a simple, rustic dish which perfectly depicts the frugality and resourcefulness of Croatian peasant food. To prepare the dish, first sauté chopped cabbage with onions and finally combine it with wide, square-shaped pasta - quadretti. 

Season with salt and pepper, but you can also add some diced bacon or pancetta. Quadretti with braised spring cabbage are a popular simple and comforting dish which represents Croatian rich agricultural heritage and culinary tradition.

Ingredients

Marodi Quadretti:  200 g

Green cabbage: 500-700 g

Onion: 150 g

Lard: 1 tbsp

Sugar: 1 tbsp

Salt: 1 tsp

Pepper: 1/2 tsp

Preparation instructions:

  • Remove the outer leaves from your cabbage head.
  • Cut the cabbage in half and use a knife to remove the tough part of the cabbage stem.
  • Cut your cabbage into 3-cm thick strips; then dice the strips into 3-cm thick pieces.
  • Peel the onion and finely chop it.
  • In a deep pan, melt a spoonful of lard, add the onion and sauté for 5-7 minutes.
  • Add sugar and continue to sauté for an additional 2-3 minutes. Add the sliced cabbage.
  • Season to taste. Stirring occasionally, braise the cabbage for at least 20 minutes. The cabbage will soften and significantly decrease in volume.
  • Cook the Marodi quadretti pasta in a separate pot, according to instructions. When the pasta is nearly done, you can add some starchy pasta water to the cabbage.
  • Drain the cooked quadretti pasta and add it to the pan together with cabbage. Mix well.
  • Serve the quadretti with cabbage warm, as a side dish to roasted sausages or meat.
  • The dish can also be served as the main course.
